Ingredients
For the Pumpkin Spice Mix:
- 100g golden caster sugar
- 1 tsp ground cinnamon
- 2 tsp ground ginger
- Generous grating of nutmeg (or 1/2 tsp ground from a jar)
- 1/4 tsp cloves
Simply mix everything together and store in an airtight jar to keep you going during cosy season - add it to bakes, lattes, and porridge too!
For the Mug Cake:
- 4 tbsp plain flour
- 1 tsp baking powder
- 2 tbsp golden caster sugar
- 1 tsp pumpkin spice mix
- Pinch of salt
- 2 tbsp Pumpkin puree (fresh or canned)
- A splash of orange extract
- 3 tbsp whole milk
You will also need a 12oz microwave safe mug
Instructions
- Mix all of the dry ingredients in your mug.
- Add the wet ingredients and mix well. Take extra care to mix the bottom and ensure no dry flour remains.
- Cook in the microwave for 3 minutes on a high heat. If it still jiggles or seems wet in the centre, continue in 30 second increments until it is cooked through.
- I served with a dollop of whipped cream and sprinkle of cinnamon. You could add custard, pouring cream, ice cream, caramel sauce - or enjoy it simply as it is!
- And there you have it - a cosy Autumn Pumpkin Spice cake in 10 minutes flat!

Can you use any mug for a mug cake?
You need to make sure it is microwave safe, usually this information is stamped on the base of the cup. This recipe makes enough to fill a 12oz mug perfectly, so just keep in mind if you have a larger mug it won't rise all the way to the top, and equally, a smaller mug maybe overflow in the microwave.
